摘要:
目的 探讨绿茶浸提液对青脚麻鸡屠宰性能、肉品质以及血清生化指标的影响。 方法 选取400只1日龄、健康且体重相近(40 g±5 g)的青脚麻鸡,随机分成4组,每组5个重复,每个重复20只鸡,公母各半。各组鸡饲喂相同基础饲粮,对照组饮用常温凉开水,试验Ⅰ、Ⅱ、Ⅲ组分别给予0.3%、0.6%和1.2%绿茶浸提液供其自由摄取,试验期42 d。试验期结束后,从每个重复中随机选取2只鸡,翅静脉采血5 mL用于血清生化指标的检测;屠宰取两侧胸肌、腿肌,分别用于屠宰性能与肉品质测定。 结果 屠宰性能结果显示,与对照组相比,各试验组青脚麻鸡屠宰率、半净膛率均显著升高(P<0.05),试验Ⅰ和Ⅱ组青脚麻鸡全净膛率均显著升高(P<0.05)。肉品质结果显示,与对照组相比,各试验组青脚麻鸡胸肌剪切力均显著降低(P<0.05),试验Ⅱ和Ⅲ组青脚麻鸡胸肌亮度(L*)值均显著降低(P<0.05),试验Ⅱ组青脚麻鸡的腿肌脂肪含量显著升高(P<0.05),试验Ⅰ组青脚麻鸡的腿肌红度(a*)值显著升高(P<0.05)。血清生化结果显示,与对照组相比,试验Ⅱ组青脚麻鸡血清总蛋白(TP)、白蛋白(ALB)、高密度脂蛋白胆固醇(HDL-C)含量均显著升高(P<0.05),血清碱性磷酸酶(ALP)活性显著降低(P<0.05);试验Ⅰ和Ⅲ组青脚麻鸡血清TP、球蛋白(GLB)含量均显著降低(P<0.05),血清ALB含量显著升高(P<0.05);试验Ⅲ组青脚麻鸡血清甘油三酯(TG)含量和ALP活性均显著降低(P<0.05)。与试验Ⅰ和Ⅲ组相比,试验Ⅱ组青脚麻鸡血清尿素氮(BUN)含量显著降低(P<0.05)。 结论 饮用绿茶浸提液可提高青脚麻鸡的屠宰性能,改善肉品质,提升腿肌脂肪沉积,并对机体蛋白质和脂类代谢具有调节作用,其中以0.6%浓度的效果最佳。
